I'm horrible at Tantalizing Tuesday. I started a new job last week, so with that and school it's a little hard to keep up (who am I kidding, without a job I'd still be a slacker on my Tuesday post)...So! I'm coming to you guys for help.

I do a similar "Food for Thought Thursday" on my own blog. The last dinner I featured was a Chicken Stir Fry Skillet (http://scribbledsentences.blogspot.com/2009/09/easy-chicken-stir-fry-skillet-courtesy.html). It's super easy!! I find most of my every day recipes on www.kraftfood.com. They have the most simple recipes and you usually have everything already in your fridge to make it! Hope that helps!!
4-Layer Pumpkin cake!
1 yellow cake mix
1 15oz can pumpkin
1/2 cup milk
4 eggs
1/3 c oil
1 1/2 tsp pumpkin pie spice
1 8oz pkg cream cheese
1 cup powdered sugar
1 tub 8 oz cool whip
1/4 cup caramel topping
1/4 cup chopped pecans
BEat cake mix, 1 cup pumpkin, milk, oil, egss and 1 tsp spice in lg bowl till well blended
Pour into two 9 in round greased, floured pans. Bake 28-30 minutes
Cool in pans
Remove from pans and cool completeley
BEat cream cheese, add sugar, 1/2 tsp spice, mix well. Gently stir in the cool whip.
Cut each cake horizontally in half, so you now have 4 layers. Spread cream cheese filling between layers.... DO NOT frost the top. Drizzle with the caramel topping . Sprinkle with nuts
SUPER YUMMY
This is incredibly easy and can simmer while you are at school or at work. It's especially awesome on a cold day!
Tomato Florentine Soup - Crockpot recipe
3 cups chicken broth (can use 4 if you want a more soupy soup)
2 (14.5oz) cans diced tomatoes with basil, oregano, and garlic, undrained
1 (15oz) can tomato sauce
1 (10oz) package frozen chopped spinach, thawed and well drained
1 cup chopped onion
1 ½ tsp. minced garlic
½ tsp. salt
¼ tsp. pepper
1 (9oz) package refrigerated cheese-filled tortellini
Garnish - shredded Parmesan cheese
Combine first 8 ingredients in a 4-quart slow cooker. Cover and cook on LOW for 5 ½ hours, add pasta and cook on LOW 30 more minutes. Garnish with Parmesan cheese. Makes 10 cups
We always serve with thick hunks of crusty bread. Enjoy!
This is one of those semi-homemade type recipes I came up with a while back. It's one of our family's favorites, GREAT dish for the fall time, and goes great to pot lucks! Enjoy!
Cranberry Almond Wild Rice
1 box Uncle Ben's Wildrice (original flavor)
1 cup Craisins (Ocean Spray is my preferred brand)
1/2 cup slivered almonds
2-3 tbs. red wine vinegar
Make rice according to box directions.
Gently toast almonds to golden brown in small skillet (stir often to prevent burning)
Stir in Craisins, almonds and vinegar.
Let ingredients heat through.
This dish is good served hot or room temperature.
Don't let the simplicity of these fool ya. They are terrific!
College Doughnuts
1 can premade buttermilk biscuits
frying oil
toppings: frosting, glaze, cinnamon sugar, sprinkles, etc
Heat oil on medium heat until hot. Poke a whole in the center of each biscuit to resemble a doughnut. Fry the biscuits for 1-2 minutes on each side or until golden brown. Then transfer to a plate covered with a paper towel to cool. Then top with your topping of choice. Then consume!! YUM!
These are perfect for this time of year. Just serve with some warm apple cider and you've got a yummy fall treat. Oh and we've also done these for a fun group date. Everyone gets a different job and you can get a fun little assembly line going. Just a warning, these things are addicting!
Meatballs..I once thought that they were only made by plump Italian women who kept their meatball recipe a carefully guarded secret by stashing it in their bra. As it turns out, that's not the case. Meatballs are easy peasy. One pound ground turkey {or beef}, one egg, some salt and pepper, maybe some garlic if you are feeling crazy, and then just enough bread crumbs or smashed up crackers to make it into a lump. Spray a cookie sheet, roll meat mixture into tablespoon sized balls, and bake at 350 for 25 minutes or so. We just toss them into some jar sauce that we have heating on the stove. Super yummy, and very easy. Give it a shot. I am very non-italian {I think my family is german/polish so I should probably try fixing something like schnitzel} and I can knock these meatballs out. If I can do it, so can you.
